Fall in Arkansas sees the days getting shorter, leaves falling from the trees, families gathering, and the holidays just around the corner. This means it’s time to bring on the pumpkin spice. These Ooey Gooey Pumpkin Spice Bars are the perfect easy addition to your upcoming potlucks and gatherings for the holidays. With only seven ingredients (most you probably already have), you can whip up a great dessert that everyone will devour, because who doesn’t love pumpkin spice?

You don’t have to be a fan of actual pumpkin to like this recipe. While I love pumpkin, I love the flavors of pumpkin spice. The spice mixture usually consists of cinnamon, ginger, nutmeg and allspice. There is no actual pumpkin, so even a non-pumpkin eater can enjoy this tasty fall treat. So, if you love pumpkin or pumpkin spice like I do, try these easy five-ingredient Cinnamon Roll Pumpkin Turnovers.

This recipe is based on an easy recipe Ooey Gooey Pecan Cheesecake Bars I use all year long, but it takes advantage of a limited edition pumpkin cake mix that is on the store shelves this time of year. It’s easy to recognize because it’s the box with the doughboy on it…you know the one I’m talking about. Even if you can’t find that particular box, you can use a spice cake mix with the same delicious outcome.

What you’ll need:

  • Pumpkin Cake Mix (or spice cake mix in the offseason)
  • Butter
  • Eggs
  • Cream Cheese
  • Pumpkin Pie Spice
  • Powdered sugar
  • Pecans

There’s nothing hard about this recipe. Let the Oooey Gooey Pumpkin Spice Bars cool before cutting and refrigerate any leftovers.

Ooey Gooey Pumpkin Spice Bars

Ingredients

  • 1 box pumpkin cake mix, 15.25 ounces
  • 1 stick of butter, melted
  • 3 eggs, divided
  • 1-8 ounce package cream cheese, softened
  • 2 teaspoons pumpkin pie spice
  • 2 cups powdered sugar
  • 1 cup chopped pecans

Directions

Heat the oven to 350 degrees. Mix cake mix, melted butter and one egg until it forms into a dough. Press the dough mixture into a 9×13 baking dish. Using a mixer, combine the cream cheese and remaining two eggs until smooth. Slowly and in batches mix in the powdered sugar. (Save a couple of tablespoons of powdered sugar for dusting after baking.) Mix in pumpkin pie spice until well incorporated. Pour the cream cheese mixture over the cake dough until completely covered. Sprinkle with pecans. Bake for 35 to 40 minutes. Sprinkle with powdered sugar. Let cool before cutting. Eat and Enjoy!

    I bought the Cinnamon Bun cake mix yesterday. I didnt notice the Pumpkin cake mix but I do have a couple Spice cake mixes. I’m considering. I’m just not sure I shouldn’t add a bit of allspice and or ginger and nutmeg. I’d love your feedback.
