The new business, Bloom Cheese Collective, will be located at 914 N. College Ave. in the space behind Pink Ferns and will offer sandwiches, beer, wine, and more.
Bloom is a project by local residents, cheese enthusiasts, and husband-and-wife team Ali and Brooks Cameron. Ali is a cheesemonger and certified cheese professional with experience running a cheese shop in Texas. Brooks is a trained chef, and opening the shop has been a longtime dream for the pair.
“My husband has been a chef for two decades,” she said. “He went to culinary school in New York, loves charcuterie, whole animal butchery, unique cuisine styles, and food anthropology. I worked at a cheese shop in Dallas, and that was a dream job, which inspired me to jump into this world and work toward getting the (certified cheese professional) certification.”
“When we met, it was like meat meets cheese,” she joked. “We’ve been dreaming this up for a decade.”
Ali said the plan for Bloom Cheese Collective is to offer cut-to-order cheeses, along with large- and small-format charcuterie to enjoy at the shop or to go. She projects offering around 100 varieties of cheeses at any given time, from items made locally to cheeses imported from all over the world.
In addition, the shop will offer around five sandwiches, a couple pasta entrees, wine by the glass, beer by the bottle, house-made crackers, cheese and artisan chocolate boards, and salads on occasion made with fresh, farmers’ market produce, and other items.
The shop will also host pop-up dinners made by chef Brooks, tastings, and educational events from time to time, Ali said.
“We’ll do pop-up dinners once or twice a month, depending on what my husband is feeling,” she said. “They’ll be super off the cuff and fun.
“We plan to have weekly classes once we get going where you come, sit down, have a tasting, and get 10 cheeses paired with four wines,” she said. “We’ll guide you through the tasting, and it will be very educational.”
