Going Green Dip for St. Patrick’s Day

Shamrocks, bagpipes and leprechauns! St. Patrick’s Day is near, and we are going green this yeat with Green Dip from the “What’s Cookin’ at First Security” cookbook.

Did you know that the March 17 holiday started out as a religious festival, or feast day, paying tribute to the patron saint of Ireland? Today, it’s turned into a worldwide celebration of all things Irish.

There’s no shortage of ways to celebrate St. Patrick’s Day in Arkansas. You can check out the First-Ever 17th Annual World’s Shortest St. Patrick’s Day Parade in Hot Springs, join the Shamrocks and Shenanigans Virtual 4-mile run/walk or simply stop by Mickey Finn’s Irish Pub in Fayetteville, just to name a few. But if you are looking to celebrate at home or with friends, whip up this easy 8-ingredient green dip and may the luck of the Irish be with you.

Sharon Duncan, a mortgage originator at First Security’s Greenbrier banking center submitted this easy and perfectly green 8-ingredient Green Dip. It’s a great dip to serve anytime of the year and even better to celebrate all that’s green for St. Patrick’s Day.

On March 17, get festive and serve this Green Dip with tortilla chips or cut green flour tortillas using a shamrock cookie cutter.  Place on a baking sheet and heat in a preheated 375-degree oven for 5 minutes or until crispy. Step it up another notch by grabbing some male green bell peppers that have 3 bumps and cut into slices. They naturally have the look of a shamrock.

St. Patrick’s Day Green Dip

Ingredients

  • 6 tomatillos
  • 2 medium green tomatoes
  • 3 medium avocados, cut in medium size pieces
  • 1 jalapeño pepper, sliced
  • 1 tablespoon minced garlic
  • 3/4 cup sour cream
  • 1/4 teaspoon salt
  • fresh cilantro to taste

Directions

Boil tomatillos and tomatoes for a few minutes to loosen the skin. Peel and cut into chunks. Put all ingredients into a blender. Blend until smooth. Serve with tortilla chips.
