Do you remember the first time you heard the word “charcuterie?” “Char-what?”
Now, I know I wasn’t the ONLY one who stumbled over the pronunciation of that word, often laughing and saying, “Char-ca, Char-coo, Char…. Never mind… meat and cheese board!”
Ha! Before we knew it, charcuterie boards were all the rage on social platforms; however, my first real-life introduction to them was through a party at work, hosted by the queen of charcuterie herself, Suzanne Billings from Noble Graze.
Back in 2016-2017, Suzanne threw open the virtual doors to her catering business, Noble Graze. Offering something “a little different” than the standard party caterers, Suzanne was one of the first to jump on the grazing board trend and it seemed like everywhere you turned around, there she was, arranging beautiful meats, cheeses, and nibbles of all sorts. I know I saw her food art on social media sites such as Instagram, as well as in person at conferences and work parties. She and her husband, Eric, would slip in quietly and start setting up shop. And before you could say “Char-what?’…. a gorgeous spread would be arranged and begging you to come and graze.
The signature item at Noble Graze is the Jarcuterie, individual single-serve “mini grazing boards,” not on a board but in a small Mason jar. Suzanne conceived the concept during the pandemic, as parties were canceled or put on hold. And the last thing anyone wanted to do at the time was openly graze! Quickly after introducing the concept, she was unable to source enough Mason jars (thanks, pandemic supply chain issues), so she started creating mini snack bundles in small cupcake boxes, cups and other available supplies.
The Jarcuterie concept was a hit! Suzanne went viral as the “motivator behind the Jarcuterie viral trend,” appearing on countless media outlets, including Bloomberg and even on Today. In 2022, Suzanne published her popular book, Jarcuterie: Elevate Your Appetizers and Snacks with Grazing Cups for Holidays, Special Occasions and Just for Fun.
Supplies and to-go orders
If you’ve tried your hand at creating a charcuterie grazing board, I’m guessing you felt pretty happy with the results. Or perhaps you felt, well, mostly happy. Just like a restaurant where you order the same menu item that you make at home and wonder, HOW did they make it taste and look SO MUCH BETTER than when you turned out (or, am I the only one who thinks this??), charcuterie boards often have the same effect: GOOD, not necessarily GREAT.

If creating a board isn’t “your thing” for your next party or shower, call ahead, drop in or order online. There are many sizes available, and Suzanne and Eric will provide you with a variety of choices: small, large or extra-large grays. There is even one called “The Great Grazer,” which is a four-foot by one-foot board that serves anywhere from 25 to 35 guests. Each tray is custom-made from solid wood.
