Rolando’s Nuevo Latino Ristorante opened its doors in Fort Smith and quickly gained a reputation for its vibrant flavors and warm hospitality. Rolando and Sherri Cuzco founded the restaurant, born out of a passion for sharing traditional Ecuadorian recipes passed down through generations, combined with her southern hospitality. Over the years, Rolando’s expanded to Fayetteville and Hot Springs, allowing even more guests to experience its culinary delights.

The restaurant’s commitment to quality and authenticity has remained unchanged since its inception. Each location reflects Rolando’s dedication to providing a memorable dining experience and the family-friendly environment ensures that guests of all ages feel welcome.

A Diverse Menu

Rolando’s boasts a menu celebrating Ecuador’s rich flavors and culinary traditions while incorporating local ingredients and influences. The restaurant offers diverse dishes, making it a perfect spot for everyone, from casual diners to those seeking a more adventurous dining experience. With adventure-filled flavors that you cannot experience anywhere else!

Highlights on the Menu:

  • Fresh Guacamole: Made to order, the guacamole is a crowd favorite. It is perfect for dipping with crispy tortilla chips or as a topping for any dish. A large bowl of guacamole is easy to share with a table and comes with red tostada shells as the garnish.
  • Black bean and corn salsa: Salsa is not an automatic at Rolando’s because it is a special dish. Made in-house, the salsa is a dippable combination of black beans, corn and a sweet, red tomato base with onions and peppers. Again, it is served with crispy tortilla chips and red tostada shells.
  • Queso Flamedo is an oooey, gooey combination of cheese and spices topped with chorizo and Bicardi, lit tableside as it is served.
  • Tacos and Enchiladas: Rolando’s takes classic favorites to the next level with options like chicken tinga, carne asada, and vegetarian enchiladas that burst with flavor. Do not miss out on the chicken enchiladas covered with white cheese dip!
  • Sizzling Fajitas: Known for their generous portions, the sizzling fajitas are a must-try. Served on a hot skillet with sautéed peppers and onions, they come with all the fixings, allowing diners to customize their plates.
  • Josefina’s Tamales: Hand-crafted and filled with various ingredients, Rolando’s tamales are a nod to traditional Mexican cooking.

  • Platos Principal: a unique collection of traditional South American dishes served like you would eat as a guest in a Southern Latino home. No detail is spared in the Cuban, shrimp, tilapia and chicken dishes collection.
  • Pescado de Mesias: tilapia covered with a tequila and caper sauce. Southern Living once said it was the reason to come to Fort Smith!
  • Sauces: every plate looks like a work of art, decorated with homemade mango, Argentinean and mole sauces. The design and decor on the edges and tops of entrees make
  • Garnish: One of my favorite things about Rolando’s is the pickled vegetable garnish on most entrees. Because I love the pickled things and my people don’t, I usually get a double portion of the red onions, cucumber slices and carrot chunks. It’s an excellent addition to any bite of food.
  • Quesadillas de Chivo: I almost always choose this meal, which involves skillet-seared chicken smashed in a tortilla shell with goat cheese and green onion spread and topped with those famous homemade sauces.
  • Signature Margaritas: To complement your meal, Rolando’s offers a selection of refreshing margaritas, with flavors ranging from classic lime to mango and jalapeño for those looking for a kick.

Inviting Atmosphere

One of Rolando’s standout features is its inviting atmosphere. Each location is designed to create a warm and welcoming environment that reflects the rich culture of Mexico. Colorful decor, vibrant artwork, and traditional Mexican accents fill the dining areas, creating a lively and festive setting.

All three of their restaurants fill historic buildings near the downtown area. They are in walkable districts with easy access to late-night festivities, afternoons with girlfriends, dinner after a big meal or celebrating a special occasion.

The original location in Fort Smith fills a historic 1850 building. At one point, it was the Border City Auto Company, a Ford dealership, a nightclub and many restaurants. But Rolando himself carved the murals in the wall of the crumbling plaster building he initially found. He desired diners to enjoy a pleasant atmosphere, adding golden walls for a joyful dining experience. Precision and focus offer dinner as an artistic expression through food.
