Stroganoff Sandwiches is an easy recipe to get dinner done on busy weeknights. Thanks to Mark Lollar, senior vice president and commercial lender in Conway, for providing this great recipe in “What’s Cookin’ at First Security Bank – Vol. 2.”
This is an easy recipe with simple ingredients, a win-win. Just chop some veggies, cook some meat, top bread and bake. Another great thing about this recipe is you can customize it to suit your family. Need something for the picky eater? Keep one side fully loaded and do meat and cheese on the other. While this recipe calls for chopped bell pepper and tomatoes, I use what I have on hand. I love the flavor and look of mini peppers, and it does not hurt when Pops drops some off from his garden. Also, I always keep cherub tomatoes on hand, delicious and pretty.
A Cooking Tip: Y’all, I cook a lot. When I stumble upon a new tip, I want to share it with everyone. I was scoping out the French bread at the store and trying to pick just the perfect loaf. I wondered if the store would cut it for me. You know, just one less step for me at home. Thank you to Vanessa for stepping into my view at the perfect moment. Not only did she tell me how to slice a loaf of French bread lengthwise, but she also demonstrated the super easy technique.
All you need is a sheet pan and a knife. Place your loaf on the baking sheet. Then, slice through your bread by running your knife down the lip of the pan. It is that easy!

Preheat oven to 350 degrees. In a large skillet, cook beef and onions together until meat is done and onions are tender. Drain. Stir in salt, garlic powder, pepper and sour cream. Slice French bread (see tip) lengthwise and spread with butter. Place on a baking sheet. Spoon meat mixture onto bread. Sprinkle with tomatoes, bell pepper and cheese. Bake for 20 minutes. Cut into individual servings, eat and enjoy!
