Mini Smore’s Cookie Cups

Can’t make it camping this summer but want to see s’mores smiles out of your kids? Try these Mini S’mores Cookie Cups! They will be a hit with the kiddos, and they are the cutest handheld dessert. And they don’t require a campfire. These Mini S’mores Cookie Cups only require 3 ingredients, a mini muffin tin and a knife to pop the cups out of the pan.

My family had a camper for years, and our favorite spot to camp in Arkansas was on Greers Ferry Lake. With the view of Sugar Loaf Mountain in one direction and the Greers Ferry bridge in the other direction, the scenery is always beautiful. And the nostalgia of always making s’mores by the campfire. Well, we sold our camper and no longer have access to the campfire these days. So, I’m bringing a fun twist on how to make those traditional campfire s’mores by showing you a recipe to have s’mores at home anytime and any day of the week with these Mini Smores Cookie Cups.

Easy Peasy Pleasy Tips

  • I used the Pillsbury Chocolate Chip Cookie Dough that’s already pre-portioned in a 24-pack.
  • Let the cookie dough bake in the mini muffin tin longer than the package directions require. Bake for 20 minutes before pressing down the middle.
  • If you try to pull out a mini cookie cup and the top separates from the bottom, it needs to be baked longer.
  • Do not refrigerate your Hershey’s Chocolate Bar ahead of time. While trying to break off the small sections, those sections broke into pieces.
  • Last tip…I passed these out to my neighbors later in the day, and one of the boys said it was “peak” after microwaving for 10 seconds. Apparently, that means it’s a good thing!

Mini S’mores Cookie Cups

Ingredients

  • 1 package Pillsbury Ready to Bake Chocolate Chip Cookie Dough sheet (24 count)
  • mini marshmallows
  • Hershey’s Chocolate Bar

Directions

Preheat oven to 350 degrees. Fill a 24-cup mini muffin tin with 1 prepared cookie dough. Bake for 20 minutes. Use the back of a measuring spoon or a tiny shot glass to press down the middle slightly. Add mini marshmallows or half of a large marshmallow to cookie cups. Keep the oven rack in the middle space. Broil on high setting and watch very closely until marshmallows are toasted. This step happens quickly, so keep a close eye. Pull the mini s’mores cookie cups out of the oven. Place an individual chocolate piece into each cup. Or if you want the chocolate more melted, place it on top immediately after you pull it out of the broiler.
