Strawberry Romaine Salad

Warm sunny days, vibrant green leaves, and fragrant flowers are springing into action here in Arkansas. We find ourselves drawn outside to enjoy Arkansas beauty at its finest. Who wants to stay inside when it’s so gorgeous out there? Since we still have to eat, what’s something that’s quick and easy to prepare with no cooking? Salads!

We are highlighting a salad that includes a colorful ingredient that you can buy at your local farmers market, pick yourself at one of Arkansas’ many you-pick-it farms, or if you’re really lucky, pick right from your own backyard: Strawberries!

Strawberry Romaine Salad is a light, refreshing, salad with just the right crunch and taste for a picnic or a backyard evening meal. You can find this, and other wonderful salad recipes in the ‘Soups & Salads’ section of ‘What’s Cookin’ at First Security’ Cookbook.

STRAWBERRY ROMAINE SALAD

Prep Time: 15 minutes
Servings: 6-8

Ingredients:

  • 1 cup vegetable oil
  • ¾ cup sugar
  • ½ cup red wine vinegar
  • 2 cloves garlic, chopped
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ¼ teaspoon white pepper
  • 1 large head romaine lettuce
  • 1 pint strawberries, sliced
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sugar toasted walnuts

Dressing

  1. Combine oil, sugar, vinegar, garlic, salt, pepper, and paprika in a large jar.
  2. Cover and shake vigorously.
  3. Store in refrigerator up to a week.

Salad

  1. Tear lettuce into bit sized pieces.
  2. Combine strawberries, cheese, and nuts and add to lettuce.
  3. Toss to mix.
  4. Shake dressing and add to salad just before serving.

ALI’S BUNCO SALAD

Prep Time: 15 minutes
Servings: 6-8

Ingredients:

  • 1/3 cup red wine vinegar
  • 1 cup sugar
  • 3 tablespoons soy sauce
  • 1 cup oil
  • 2 tablespoons butter
  • 1 package ramen noodles
  • 1 large bag baby spinach leaves
  • 2 to 3 cups sliced strawberries
  • 1 cup sliced walnuts or pecans
  • ½ cup shredded mozzarella cheese
  • 1 package goat or feta cheese crumbles
  • Salad topper mix, to taste

Instructions:
Dressing

  1. Combine red wine vinegar, sugar, soy sauce and oil.
  2. Shake well.
  3. Refrigerate for up to one week.

Salad

  1. In a large skillet, melt butter.
  2. Break up ramen noodles into butter and saute’ until lightly browned.
  3. Toss remaining salad ingredients.
  4. Shake dressing and add to salad just before serving.

Carbohydrates: 45 grams
Sodium: 921 milligrams

7  LAYER SALAD

Prep Time: 15 minutes
Chill Time: 24 hours
Servings: 6-8

Ingredients

  • 2 cups mayonnaise
  • 2 tablespoons sugar
  • 1 head lettuce
  • ½ cup chopped green peppers
  • 1 onion, diced
  • One (10 ounce) package frozen peas
  • One (4 ounce) package Velveeta grated cheese
  • 6-8 strips bacon fried and crumbled
  • 1 cup Parmesan cheese

Instructions:

  1. Mix mayonnaise and sugar. Set aside.
  2. Chop lettuce.
  3. In a large salad bowl layer lettuce, green pepper, onions and peas.
  4. Spread mayonnaise mixture over salad layers.
  5. Top with cheese and crumbled bacon.
  6. Chill 24 hours.
  7. To serve, toss and top with Parmesan cheese.
