Strawberry Gooey Cake For Your Valentine

Love is in the air and this Strawberry Gooey Cake is the perfect treat for your sweetheart this Valentine’s Day. Love, romance, and strawberries go hand in hand, and Valentine’s Day is the culmination of all three. In my mind, strawberries are the perfect sweet treat for Valentine’s Day and this recipe does not disappoint. I go with the old adage that the way to the heart is through the stomach. I cannot think of a better way to express love to your Valentine than a special dessert with strawberries.

Tips For Strawberry Gooey Cake

  • Reserve ¼ cup of powdered sugar for the topping. I like to use a sifter to sprinkle the powdered sugar.
  • Don’t forget to set out the cream cheese to soften and bring to room temperature.
  • Optional garnish idea…fan strawberries for topping. I slice the strawberries almost to the core and use my fingers to gently spread into a fan shape.
  • Dress up this dessert even more with a dollop of Cool Whip or Reddi Wip.
  • Amber sliced the strawberries to add to the cream cheese mixture, while I diced the strawberries. This was just my personal preference to make cutting the cake into bars easier.

Strawberry Gooey Cake

Ingredients

  • 1 box strawberry cake mix
  • 1 stick butter, melted
  • 4 large eggs
  • 1 (8-ounce) cream cheese, softened
  • 1 (16-ounce box) powdered sugar
  • ½ tablespoon vanilla extract, optional
  • 1 to 1 ½ cup sliced strawberries

Directions

Preheat oven to 350 degrees. Mix together strawberry cake mix, butter and 2 eggs. Spray a 9 x 13-inch pan with non-stick cooking spray. Spread mixture into pan. Beat together cream cheese, 2 eggs, powdered sugar and optional vanilla. Once mixed, stir in sliced strawberries. Spread on top of cake mixture. Bake for 45-50 minutes or until golden brown.
