Arkansas Barbecue Fiesta: BBQ Chicken Tostadas

We continue celebrating National Barbecue Month in style with these mouthwatering Arkansas-inspired BBQ Chicken Tostadas! As the weather warms up, it’s time to dust off the grill and let your favorite barbecue sauce shine. This recipe is a game-changer for those busy weeknights when you need a quick and delicious meal with just 5 ingredients and 20 minutes of your time.

Easy Peasy Pleasy Tips…

  • I like to grill a big batch of chicken all at once and use it throughout the week. This recipe calls for 3 cups of cooked and shredded chicken. I used my already grilled chicken to make an easy weeknight meal.
  • This is a great recipe to use rotisserie chicken, grilled chicken or pulled pork.
  • You can customize this recipe with your favorite meats, veggies, cheeses, and sauces! If you like red onions or Ranch dressing, add them!

BBQ Smoky Chicken Tostadas

Ingredients

  • 8 tostada shells
  • 3 cups cooked chicken, shredded or diced
  • 1 1/2 cups BBQ sauce
  • 2 cups shredded mozzarella cheese
  • 3 green onions, thinly sliced

Directions

Preheat oven to 350 degrees. Lay out the tostada shells on a baking sheet. Combine the chicken and 1 cup of barbecue sauce in a bowl, stir to coat. Evenly divide the chicken between the tostada shells and top with cheese. Bake for 6-8 minutes until the cheese has melted. Remove from the oven and drizzle with remaining 1/2 cup barbecue sauce. Sprinkle with green onions.
