Down-Home, Delicious Biscuits

There’s just something about a favorite recipe passed down through the family. We probably all have a beloved grandmother, aunt, or mother that could draw you from the bed on a Saturday morning with the aroma of homemade biscuits.

Arkansas has a long tradition of good Southern cooking. And the folks at First Security are no exception. So we’ve included a biscuit recipe from our ‘Tasty Traditions’ section of our What’s Cookin’ at First Security Cookbook.” This section is devoted to recipes that have been passed down from generation to generation. You will find a mouth-watering assortment of biscuit recipes in this section as well as the ‘Breads and Rolls’ section.

FLAKE BISCUITS

Prep Time: 30 – 40 minutes
Servings: 2-3 dozen biscuits

FS OIA April biscuits ingredients

Ingredients:

  • 1 packet yeast
  • 2 tablespoons warm water
  • ¼ cup sugar
  • ¾ cup shortening
  • 5 cups self-rising flour
  • 2 cups buttermilk

Directions:

  1. Preheat oven to 450 degrees.
  2. Dissolve yeast in warm water.
  3. In a large mixing bowl, cream sugar and shortening.
  4. Stir in yeast mixture, flour, and buttermilk.
  5. Pinch off small pieces of dough and roll into biscuits.
  6. Place on baking sheet.
  7. Bake until golden brown or about 15 to 20 minutes.

Note: Dough may be refrigerated for a week or more.

Carbohydrates: 15.3 grams
Sodium: 15 milligrams

BAKING POWDER BISCUITS

Prep Time: 30 – 40 minutes
Servings: 10 – 12 biscuits

Ingredients:

  • 2 cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon sugar
  • 1/3 cup shortening
  • ½ cup milk

Instructions:

  1. Preheat oven to 400 degrees.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, and sugar.
  3. Cut shortening into flour mixture with a pastry cutter or fork.
  4. Add milk.
  5. Turn dough onto a floured surface and knead 10 times.
  6. Roll out to ½ inch thickness and cut with floured biscuit cutter or round glass.
  7. Bake for 10 to 15 minutes at 400 degrees, or until golden brown.

Calories: 136

Calories from Fat: 55
Carbohydrates: 17.8 grams
Sodium: 58 milligrams
Protein: 2.5 grams

BISCUITS

Prep Time: 30 – 40 minutes
Servings: 10 – 12 biscuits

Ingredients:

  • 2 cups of self-rising flour, plus extra to add
  • ½ cup shortening
  • 1 cup of milk

Instructions:

  1. Preheat oven to 500 degrees. If using a cast iron skillet, preheat skillet as well.
  2. In a large mixing bowl, cut shortening into flour with pastry cutter or fork until it forms lumps that are about the size of peas.
  3. Add milk and stir in gently.
  4. Form dough into a ball, adding more flour if necessary to keep it from being too sticky.
  5. Turn out on floured cloth or surface and pat dough until it is about ½ inch thick.
  6. Fold the dough in half and pat again until it is about ½ inch thick. DO NOT OVERWORK THE DOUGH.
  7. Cut with floured biscuit cutter or round glass to make biscuits.
  8. Place in heated cast iron skillet and bake in a 500 degree oven until golden brown, or 10-12 minutes.
