Two-Ingredient Spinach Dip Pinwheels Perfect for St. Patrick’s Day

I

If you’re heading to Arkansas’ most delightfully quirky St. Patrick’s Day celebration, you’ll need a snack that’s just as festive — and just as easy. These two-ingredient spinach dip pinwheels are a bright, no-fuss addition to your St. Patrick’s Day charcuterie board, bringing a pop of green without adding stress to your prep list. With minimal effort and maximum flavor, they’re the kind of shortcut that makes hosting feel simple — whether you’re feeding parade-goers or just keeping the family fueled for the day.

And what a day it is. Arkansas is home to the First Ever 23rd Annual World’s Shortest St. Patrick’s Day Parade, a 98-foot spectacle that packs plenty of personality into a very small stretch of road. The annual Hot Springs event draws big names and big crowds, with past lineups featuring celebrities, musicians and high-energy performances — all squeezed into less than 100 feet. It’s proof that in Arkansas, we know how to celebrate in a big way, no matter the size.

Food ideas for your charcuterie board and ways to make it easy:

  • 2-ingredient Spinach Dip Pinwheels (recipe below)
  • Spinach Tortilla Shamrocks
  • Broccoli
  • Green grapes
  • Cucumbers
  • Green apples

  • Chips
  • Crackers
  • Almonds

Easy Peasy Pleasy Tips

  • Use store-bought, prepared spinach dip to make 2-ingredient pinwheels.
  • If using prepared dip (like in this recipe) to make pinwheels, throw them in the freezer for about 20 mins, still wrapped in plastic wrap, to make slicing easier.
  • Use a bread knife to make cutting easy.
  • Use a shamrock cookie cutter to cut out the perfect shapes on spinach tortillas.
  • To save time, check out the produce section for precut broccoli and pre-sliced green apples to add to your board.
  • Also, grab your favorite pre-made guacamole from the produce section and add it to a cute container on your board.
