Y’all are going to love these super-easy festive two-ingredient Jell-O marshmallow pinwheels. They’re the perfect sweet treat for summer! With the Fourth of July this weekend, these cute pinwheels are something your kids (and kids at heart) will devour.
In Arkansas, we celebrate the Fourth of July on the lakes, at pools and even in our own backyards. Shooting fireworks, cooking out and celebrating mean quick and easy recipes are always a must. This recipe is kid-approved and delicious. It’s super easy to make ahead, which is highly recommended.
Whether you’re spending the day on a boat or just hanging out in your backyard, you’ll want to whip up a couple of batches of these two-ingredient Jell-O marshmallow pinwheels. The kiddos can eat them whole, pinwheel-style or peel them apart like Fruit by the Foot. Either way, they’ll love them!

• Plan to make these ahead of time. They take 5 minutes to prep and 2 hours to set in the fridge. Then it takes only 5 minutes to roll up and slice. Total hands-on time is about 10 minutes per batch.
• Once you’ve rolled your Jell-O marshmallow pinwheels, place them seam-side down on parchment paper before slicing.
• Use a sharp knife and cut straight down. No sawing action is needed.
• Start your roll from the 8-inch side. When using an 8-by-11-inch baking dish, rolling from the 8-inch side creates larger pinwheels.
• Keep in mind this recipe is for one color of Jell-O mix. Repeat the same process for each color.
• Use any color of Jell-O to create the perfect addition for any holiday.
• If making these a day ahead and layering them, place parchment paper between the layers.
• Keep refrigerated until ready to serve.
• 1 3-ounce package Jell-O
• 1 1/2 cups mini marshmallows
• 1/2 cup water

Lightly spray an 8-by-11-inch baking dish with nonstick cooking spray.
In a small saucepan, bring 1/2 cup of water to a boil on the stovetop. Once boiling, pour in the 3-ounce package of Jell-O. Turn off the heat and whisk until completely dissolved, with no crystals remaining.
Pour the hot Jell-O over the mini marshmallows in a medium microwavable bowl. Whisk until the marshmallows completely dissolve. If they do not fully dissolve, microwave the bowl for 30 to 45 seconds. Whisk again until the mixture is smooth and frothy.
Pour the mixture into the prepared baking dish. Refrigerate for 2 hours, or until set.
Run a knife or thin spatula around the edges to loosen the Jell-O. Starting from the 8-inch side, roll the Jell-O tightly. Place the roll on parchment paper and slice with a sharp knife.
Arrange the pinwheels on a serving dish. Cover and refrigerate until ready to serve.
