This recipe was unique to me because it called for shoestring potato sticks rather than Chow Mein noodles. I have always used Chow Mein noodles because they can absorb any flavor they are coated in. So, seeing this recipe called for shoestring potatoes, I knew it was a must-try, and it did not disappoint. The shoestring potato sticks are where it’s at! It gives that sweet and salty flavor to the perfect bite.
Have you ever used Reese’s peanut butter chips? I had to do a test batch of Haystacks with melted peanut butter chips, and they were to die for. If you love peanut butter chips, do the whole recipe with them. They turned out even better than the butterscotch chips. Y’all, it’s dangerous!

In a large microwaveable bowl, melt butterscotch chips. Add shoestring potatoes and peanuts to the melted chips. Stir until well combined. Drop quickly onto wax paper in the shape of haystacks.
