Comforting Taco Soup

It’s cold weather comfort food season, and soup is on the menu with this super easy Taco Soup Recipe! It’s a quick soup to make up on a busy weeknight and can be customized to your taste. My favorite part is it can all be cooked in one pot with minimal cleanup. You start with a great base by browning some ground beef or ground turkey, adding a couple of seasoning packets, and then popping open some cans of beans, Ro-Tel, and corn. It’s that easy! You can easily punch up the taste by adding your favorite flavors with extra seasonings, jalapeños, sour cream, and cheese. Oh, and don’t forget your favorite chips. You must have that crunch!

Easy Peasy Pleasy Tips

  • For this recipe, don’t drain your canned items. Just dump them all in.
  • I added cumin, oregano and a can of tomato sauce.
  • If you are looking to add a spicy kick, add cayenne and top with jalapeño slices.
  • Fritos or Tostitos are a must-have.
  • I also found a creative way to use up the leftover Taco Soup in a totally different way. I used a slotted spoon to completely drain off the liquid and used the meat and bean mixture to make Cheesy Taco Quesadillas.

Taco Soup

  • 1 pound ground beef
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can dark red kidney beans
  • 1 (15 ounce) can pinto beans
  • 1 (15 ounce) can corn
  • 1 can Ro-Tel
  • 1 package taco seasoning
  • 1 package ranch seasoning

Directions

In a large size pot, brown your meat on medium heat and combine seasoning packets. Add all canned items and stir until well combined. Cover pot and turn to simmer for 20 minutes. Serve with your favorite toppings and big smiles!
