Farmer’s Casserole is What’s Cookin’


This month, for the “What’s Cookin’ at First Security” cookbook, we’re finding comfort in a casserole made with only a few ingredients. This Farmer’s Casserole comes fresh from the oven with hot potatoes, bubbling cheese, the unique simplicity we need these days, and the familiar taste that brings warmth and peace with every bite.

Submitted by Lisette Washispack, First Security vice president of credit administration in Conway, the casserole recipe is also an easy way to use vegetables that need to be eaten.

Arkansas Farmers’ Markets

The opening of farmers’ markets is one of the most refreshing signs of spring around our state. Loading up baskets and boxes with an abundance of vegetables allows us to support farmers with our purchase and families with fresh, local foods.

This spring, getting out to a farmers market might not be possible. But from the (somewhat-forced) comfort of our homes, we can support Arkansas farmers and have our fresh veggies, too.

Locally Grown provides access to online ordering from local markets and includes information for over a dozen locations in the state, including Conway, Siloam Springs, Paris, Atkins, Berryville, Ozark and Stone County.

Arkansas Grown is another source of agricultural products, services and markets. The program, started in 2012, is administered through the Arkansas Department of Agriculture and helps endorse the agricultural products grown in the state. According to the site, the program helps make “the critical connection between producers and consumers.”

Farmer’s Casserole

Six ingredients and a little salt and pepper are all you’ll need for this flexible recipe, perfect for breakfast or dinner. If you don’t have a particular food on hand, change the ingredients. Frozen onions or chopped fresh white onions will work in place of green ones. Use your favorite cheese blend instead of Monterey Jack. No ham? You guessed it: whatever meat you have in the fridge will do.

Farmer’s Casserole is also great for not-so-early risers. Prep ingredients the night before and allow them to rest in the refrigerator overnight. Bake the next morning for a hot meal to start the day.

Employees and customers submitted over 800 recipes for the second volume of “What’s Cookin’ at First Security Bank” cookbook. Proceeds from the sales will go to the Arkansas Hunger Relief Alliance to help feed people across the state. The cookbooks can be purchased for $20 at First Security Bank locations. Purchase and pickup are available through the drive-thru for your convenience.

Farmer’s Casserole Recipe


  • 3 cups frozen hash browns
  • ¾ cups shredded Monterey Jack cheese
  • 1 cup cooked ham, cubed
  • ¼ cup green onion, chopped
  • 4 eggs, beaten
  • 12 ounces evaporated milk
  • ¼ teaspoon black pepper
  • ½ teaspoon salt


Grease a 2-quart rectangular baking dish. Arrange potatoes evenly on the bottom of the baking dish. Sprinkle with cheese, ham and onions. Combine eggs, milk and seasoning. Pour over potatoes and cheese. Refrigerate overnight. Bake at 350 degrees for 40 to 50 minutes until set. Let rest 5 minutes before serving.
