Roasted Parmesan Sweet Potatoes for Thanksgiving Dinner

It wouldn’t be Thanksgiving without sweet potatoes, and this Roasted Parmesan Sweet Potatoes Recipe comes together in minutes. Pop it in the oven and get ready to enjoy a lightened-up version of a traditional sweet potato side dish this Thanksgiving or any time of the year. If you are looking for a side dish that is a healthier option, you’ve found the recipe that provides all the flavor and a little less guilt.

Easy Peasy Pleasy Tips!

  • When it’s time to chop your sweet potatoes, enlist your husband’s help. Lol! Those babies can be hard to cut.
  • Ensure the cuts are all about the same size so they cook evenly.
  • I used fresh thyme in place of the dried thyme.
  • When broiling the sweet potatoes, watch them carefully so they don’t burn.
  • Keep in mind this recipe is more savory than sweet. Check out the links below if you want a sweeter version of sweet potatoes.

Roasted Parmesan Sweet Potatoes

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 2 large garlic cloves, minced
  • 2-3 tablespoons Parmesan cheese, finely grated
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Directions

Preheat oven to 400 degrees and position rack to middle position. Line the bottom of a large baking sheet with foil. In a medium bowl, place the sweet potatoes, olive oil, Parmesan cheese and dried thyme, then mix. Sprinkle with salt and pepper to taste. Transfer the sweet potato mixture to the baking sheet and spread out to form a single layer. Roast for about 40 minutes or until the potatoes can easily be pierced with a knife. Set the oven to broil until the tops are browned.
