To make this recipe come together even quicker, start boiling your water for the pasta first. Then start chopping your veggies. Once your water comes to a boil, cook pasta according to package directions. While pasta cooks, finish up chopping the vegetables. All vegetables will be chopped and ready to go when the pasta is cooked.
This recipe calls for Mayonnaise or Miracle Whip. Speaking from experience, there is a slightly different taste. Miracle Whip tends to lend a tangier sweet taste than mayonnaise. This is a judgment call for how sweet you like your macaroni salad and if you prefer Miracle Whip over Mayonnaise.
Cook macaroni according to package directions or to desired tenderness. Drain. Rinse with cold water until cool to touch. Drain again. In a large bowl, mix celery, bell pepper, onion, sweet relish, Velveeta cheese, and cooked macaroni. Salt to taste. Cover and refrigerate overnight.
