Chicken Pasta Salad For The Summer Win

What’s the word I’m looking for here…oh yeah, it’s YUM! This chicken pasta salad will easily become a make-ahead and take-with-you dish all summer long. It’s the perfect blend of sweet with savory and a breeze to make. It can be mixed up ahead of time making summertime easy.

When the heat is on and you are headed to a cookout, potluck, lake time, or pool time, this Chicken Pasta Salad will be a hit. The chicken makes it a complete meal for the perfect summer lunch! But you can skip the chicken altogether for a great summer side dish when headed out potluck style.

Easy Peasy Pleasy Tips

  • Place canned items in the fridge. When I’m preparing a cold dish, I place the canned ingredients in the refrigerator to chill. Then they are at the perfect temperature to start the dish off cold.
  • Red grapes are usually small, so I skipped cutting them in half. It’s a time saver and still the perfect burst of sweetness.
  • Place ice in a throw-away pan, then place your dish in the ice to keep cool when outside on these hot summer days.
  • I always go for a rotisserie chicken when possible. They are still only $4.98 at Sam’s Club. The cooking is done and it’s a lot of chicken. I only needed to use half of the rotisserie chicken for this recipe.

 

Chicken Pasta Salad

Ingredients

  • 1 pound box rotini pasta
  • 1 (1 ounce) package Ranch dressing mix
  • 2 cups mayonnaise
  • 3 cups cooked chicken breast
  • ½ cup diced red onion
  • ½ cup diced celery
  • 2 cups red seedless grapes, halved
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 (15 ounce) can mandarin oranges, drained

Directions

Cook pasta according to package directions. Drain and cool. In a large bowl, combine Ranch dressing mix with mayonnaise. Stir in chicken, onion, celery, grapes, and pineapple. Add pasta and toss to coat. Gently stir in mandarin oranges. Chill until ready to serve.
