Springtime Veggie Delight

Spring has sprung and Easter is this weekend! This Veggie Delight recipe is sure to brighten up any table. Whether you are serving lunch, heading to a potluck brunch or having Easter dinner, this versatile recipe will be a hit. It’s a recipe that is delicious and can be completely customized with your favorite vegetables.

Easy Peasy Pleasy Tips

  • The recipe calls for 3 cans of crescents, but I found the Pillsbury Dough Sheets and only needed 2 cans for a large baking sheet.
  • As always, don’t forget to let your cream cheese soften.
  • Bake the crescent sheets first so it will have time to cool before assembling.
  • You can absolutely prep all components of this recipe ahead of time and assemble when ready.
  • Use your favorite veggies. The recipe called for cauliflower and cheese, but I used red and yellow bell peppers as my favorite combination. Radishes and green onions would be great options as well.
  • A pizza cutter is the way to go for cutting slices.

Veggie Delight

Ingredients

  • 3 (8-ounce) cans crescent rolls
  • 2 (8-ounce) packages of cream cheese
  • 1 cup mayonnaise
  • 1 package Ranch dressing mix
  • 1/2 cup chopped broccoli
  • 1/2 cup chopped cauliflower
  • 1/2 cup chopped carrots
  • Shredded cheddar cheese

Directions

Unroll crescent rolls and press seams together. Place dough on cookie sheet and bake for 7-10 minutes at 375 degrees. Let cool. Mix cream cheese, mayonnaise, and Ranch dressing mix together. Spread mixture on top of crescent rolls. Sprinkle vegetables on top of cream cheese mixture. Sprinkle cheddar cheese over vegetables. Refrigerate until ready to serve. Cut into squares before serving. May substitute other fresh vegetables of your choice.
